Ingredients

  • 2 small sweet potatoes, sliced into fries
  • ¼ tsp olive oil
  • 2 skinless chicken breasts, finely chopped
  • 4 tbsp water
  • 1 egg, lightly beaten
  • 4 crackers, crushed

Method

  • Preheat oven to 200°C/400°F/Gas 6.
  • Put the sliced sweet potato on a baking tray, drizzle over the olive oil, season lightly and bake in the oven for 40 minutes.
  • Meanwhile, combine the egg and water in a bowl.
  • Put the crushed crackers in a shallow dish.
  • Take a spoonful of chopped chicken and gently dip into the egg mix then roll in the crackers until lightly coated and place on a lined baking tray.
  • Bake for the last 15 minutes along with the sweet potato chips until cooked through and golden brown.
