If the weather/the long road to payday/half term (delete as appropriate) has been getting you down, fear not as today is pancake day and we’re here to spread the joy with the best pancake day recipes.

Can you have a big fat stack of pancakes when you’re trying to lose weight? Well, you may want to keep an eye on how high your stack gets, but otherwise what’s a gloomy Tuesday in February without pancakes?



Pancake Day recipes



The basic one

Serves 4

  • 2 medium eggs
  • 75ml semi-skimmed milk
  • 80g self raising flour
  • 3tbsp caster sugar

In a large mixing bowl, combine the eggs and milk. Sift in the flour and add the sugar. Whisk together until completely combined.

Spray a non-stick frying pan with Frylight, stick it on a low/medium heat and drop in 3 or 4 spoonfuls of batter if you want a fluffy American-style pancake, or if you’re more of a thin, crepe-style fan, swirl a spoonful of batter around the pan to make a thinner pancake.

The pancakes are ready to flip when they start bubbling on top. Our main tip? Be patient! Don’t be tempted to whack the heat up as they burn very easily.

The two-ingredient one

Serves 2

This recipe has been floating around the internet for years and is particularly favoured by those following Weight Watchers as they’re 0sp. As far as pancakes go, they’re not exactly like pancakes, but they’re nice in their own right, especially when paired with yogurt and a handful of strawberries.

  • 2 medium eggs
  • 1 banana

Mash the banana and mix in the eggs, then cook in a non-stick frying pan. We suggest adding a tbsp of self-raising flour to the mix as without it they can be difficult to flip.

115 calories per serving (add 25 cals per serving for a tbsp of flour if using)

The indulgent one

Pancake Day is basically Christmas in February, so if you’re treating yourself and want something more indulgent, give Nigella Lawson’s American pancakes a go. They’ve got melted butter in the mix, they’re thick and spongy and they’re amazing. Especially with bacon.
