Over on the forum Jaxom is a popular guy who’s always up for supporting other MAN v FAT members with their weight loss. He’s also a terrific cook, so we challenged him to put together a soup recipe after he claimed that he could make one better than a certain well-known soup brand’s tomato soup. Creamy Tomato Soup
Makes 4-6 servings (1200g in total)
Total calories for 1200g = 640 calories
- 400g sweet potato peeled and rough chopped
- 1 can of chopped tomatoes (400g)
- Quarter teaspoon of basil
- 1 tsp salt
- 1 clove of garlic chopped
- 1 heaped tsp of tomato purée
- 400ml water
Directions
In a 20cm saucepan put the sweet potatoes, water, garlic, basil and salt into the pan. Bring to the boil and turn down to a simmer for 10 mins, or until the sweet potato is tender – a sharp knife should be able to easily pierce the potato.
Turn off heat and add the tomato purée and chopped tomatoes to the pan.
Blend the saucepan’s contents until the sweet potatoes and tomatoes are smooth and creamy.
Put back on the heat and warm to JUST BEFORE boiling. DO NOT boil or simmer, as the soup will separate and the tomatoes could turn bitter.
Serve immediately.
Notes
If you want to double this recipe then it is easy. You just double everything apart from the garlic, basil and salt which you leave the same. Only add another measure of garlic, basil or salt if you are tripling the finished quantity of soup.
I made this recipe for less than the cost of a single can of the slightly-better-known soup. It cost me less than 80p. One can of famous soup 400g, currently costs 95p – plus there are no added sugars or preservatives and at approximately 120 calories per bowl you can even enjoy them on a 5:2 day!
