Protein power pizza

I LOVE pizza. Dough. Tomatoes. Cheese. Meat (or veggies, I'm not fussy). What's not to love? I dread to think how much of my money Domino's has commandeered over the years and the worst part is that I always feel so guilty when I fire up the Domino's website after a long day at work, not only because of what pizza plus sides and cookies are doing to my waistline but also because of what it's doing to my bank balance - it's not cheap! 

Even if you're not likely to start making your own pizza dough at home, it's still pretty easy to replicate those pizza flavours with next to no effort. Here, we've created the ultimate protein-packed lunch for pizza lovers which is easy to make and won't leave a burning hole in your pocket.

 ¼ tsp olive oil
 1 tsp tomato puree
 50 ml passata
 1 pinch garlic powder
 ¼ tsp dried oregano
 1 pinch salt and pepper
 2 large eggs
 25 ml semi-skimmed milk
 60 g grated mozzarella
 15 g sliced chorizo
 fresh basil

First, make the tomato sauce. In a small saucepan, heat half of the olive oil, add the tomato puree and stir for a few minutes before adding garlic powder, half of the oregano and passata. Heat on a moderate heat while you make the pizza base. You might want to put a lid on the sauce as it has a tendency to bubble.

Preheat the oven to 180 degrees/gas mark 4.

While the sauce is cooking away nicely, beat the eggs, milk, salt, pepper and the other half of the oregano in a large bowl until the eggs and milk are combined.

In a small oven-safe frying pan heat the remainder of the olive oil over a medium heat. Place the egg mixture in the pan and allow to set on the bottom before lifting the eggs to create a firm omelette.

Once the eggs are almost set, place the pan in the oven for just a minute. Remove from the oven and sprinkle with mozzarella and chorizo slices.

Place back in the oven for around 8 minutes until the cheese has melted and chorizo is crispy.

Remove from the oven and allow to rest for a few minutes before tearing the fresh basil over the top. 

This can be enjoyed hot or cold and it's packed full of protein, which will leave you feeling full for hours. It's also really low in carbs, so perfect for those low-carbing it. And while it's not exactly pizza, it's a very good alternative which you don't need to feel quite so guilty about having on the regular.
